Roasted Pear Salad

Mediterranean Salad Mix

3 ripe Bosc brown pears, cored and thinly sliced

1 T butter melted

1 tsp. sugar

1 tsp. lemon juice

6 oz. crumbled Bleu cheese

1 cup Cape Cod Cranberry Wicked Walnuts, chopped slightly

Olive oil and balsamic vinegar combined with 1/8 cup finely chopped basil


Preheat oven 400*. Toss pears in butter, sugar and lemon juice. Bake 20-30 mins. on parchment lined sheet. 


Stir every 10 minutes until golden. Place salad greens on a round platter, arrange pears on top to form a wreath. Sprinkle Wicked Walnuts and Bleu cheese on top. Serve with vinaigrette.
