4 cups Oat Bran, uncooked
1/2 c. firmly packed brown sugar
4 t. baking powder
1-1/2 t. cinnamon
1/2 t. nutmeg
2 c. lowfat milk
2 eggs, slightly beaten
1/2 c. honey
4 t. vegetable or olive oil
1 cup (4oz bag) Wicked Walnuts, slightly chopped
Heat oven to 425* Line 9-10 large muffin cups with paper liners. Combine dry ingredients in a bowl and mix well. Add combined milk, eggs, honey and oil. Mix into dry ingredients until moistened. Stir in Chopped Wicked Walnuts. Pour approx. 1/2 cup into each muffin cup. Bake 15 to 17 minutes.
