Eggnog Bread

2 cups prepared baking mix such as Bisquick

3/4 cup sugar

1 1/2 teaspoons nutmeg

1 package of instant vanilla pudding (4 - 1/2 cup serving size)

1 cup egg nog

1/4 cup butter, melted

2 T Brandy or Rum

3 eggs

1 1/2 cups chopped Wicked Walnuts

Egg Nog Glaze (recipe follows)


Preheat oven to 350°F Spray loaf pan.

Stir together baking mix, sugar, nutmeg and pudding mix in a large bowl. Whisk together egg nog, butter, rum or brandy and eggs in a medium bowl. Add to dry ingredients and stir until flour is almost incorporated. Add chopped Wicked Walnuts and stir again lightly. Spoon into prepared pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out almost clean. Let cool in pan 15 minutes then remove from pan.


Egg Nog Glaze: Stir together 1 cup powdered sugar and 2 tablespoon egg nog until smooth.
