2 8 oz packages of cream cheese, softened
4 6" flour or wheat flour tortillas
1/8 cup butter
1/2 cup sugar
1/4 tsp cinnamon
1/8 tsp nutmeg
2 large Macintosh apples, peeled, cored and thinly sliced
1 cup Wicked Walnuts, slightly chopped
Vanilla Ice Cream
Melt butter in a small skillet. Add apples, sugar and spices. Saute approximately 3 minutes. Set aside.
Spread each tortilla with 1/4 of the softened cream cheese covering to edges. Spoon 1/4 of the apple mixture on half of each tortilla. Sprinkle 1/4 cup of Wicked Walnuts over apples. Fold in half folding plain cream cheese side down on top of Wicked Walnuts and apples. Spray a large skillet with cooking spray and cook each quesadilla until golden on both sides. Cut in half. Serve with a scoop of vanilla ice cream.
